Good ole sweet potato.
There are many benefits to my boo thang sweet potato. Not only do I automatically switch into a Southern belle with a drawl to rival Beyoncé’s, this delicious vegetable is extremely versatile. It is perfect for both savoury and sweet dishes. You can bake, boil, fry, roast, steam or mash ’em and they will still taste amazing! Sweet potatoes have various health benefits ( high in vitamin B6, good source of vitamin C and contains vitamin D) and just looking at its vibrant orange flesh makes you feel happy. You just can’t go wrong with a lil’ bit of sweet potato lovin’.
This was an experimental pancake day recipe I fell in love with and one I had to recreate to share with you all on International Women’s Day.
Boys get in the kitchen and create this for that special lady in your life whether that be your mum, sister, lady love or your best girl mate!
Sweet Potato Pancakes recipe
200g sweet potatoes
80g plain flour
1 teaspoon baking soda
2 tablespoons melted butter
1 tablespoon brown sugar
140ml whole milk
1 teaspoon of cinnamon
1 teaspoon of mixed spice
Maple syrup to serve
Bacon optional… mandatory for myself
Place sweet potato in a preheated oven 180/160c fan/Gas Mark 4 to roast for one hour or until it is soft to the touch. Alternatively, you can steam the sweet potatoes for twenty minutes.
Look at that flesh! Beautiful!
In one bowl shift flour, baking soda and brown sugar. In a separate bowl, whisk the milk and egg together then slowly pour in the melted butter.
Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter like this.
Season your sweet potato with cinnamon and mixed spice.
Fold in the seasoned sweet potato mix to the flour mixture and your batter is now complete.
Warm a non stick pan and get to flippin’.
Pancakes are ready when both sides are golden brown. Drown the pancakes with lashing of maple syrup and ENJOY!!!
I love eating these pancakes in my favourite place on a Sunday morning…in my bed watching movies, reading blogs and newspapers…pure bliss!
Once you have tried these pancakes, it makes it so hard to go back to eating regular ones. Look at how moist they are!
